This weekend I was cooking my heart out. And everything I made turned out great. Couldn't ask for anything more. Saturday I made cookies and then meatballs. Sunday morning it was time for tiramisu and some more cookies and then on top of that I made pate for the very first time.
I checked online for some guidelines and it seems easy enough, so I thought I'd give it a try. And I already bought some chicken liver so I had to make something.
This is what I used:
500 gr chicken liver
1 chopped onion
3 cloves of garlic
one handfull flat leave parsley
salt and pepper
bacon (optional)
I washed and cleaned the livers by removing the fat that's attached in between the liver parts.
I sauteed one chopped onion and 3 cloves of garlic in two table spoons of butter. When they started to brown I added half a tea spoon of salt and lots of fresh pepper and turned off the stove. If you have some sherry, this would be the time to add some. I forgot to buy some sherry, but I will make sure I have some in my pantry for next time.
I added the liver and made sure everything was well incorporated. I wanted the liver to be raw so I could bake it in the oven.
My mixer was kinda small so I had to make two batches. On top of the liver I added some flat leave parsley. I like my pate with little bits so I only pulsed it instead of grinding it finely.
I put the liver mixture in little ramekins and baked them in a water bath in a preheated oven on 160 degrees for about 40 minutes.
The last 15 minutes or so I put some bacon on top of every ramekin, just to make them look pretty.
I ate it with some baguette and it was tasty!!! It was so good my little sister was more then happy to bring one ramekin home.
It was so easy to make pate, I think I should make it more often. Experiment with different flavors. And this time actually add some sherry.
Making pate took only minutes...the hard part is waiting for the pate to cook. Give it a try, it is lots easier then you think and it will taste 100 times better then the store bought ones.
Wow. Homemade pate. Now that's amazing! I didn't think it was that easy to make.
