I’ve seen a lot of very good (stir) fried rice recipes these days and I love all of them. What is there not to love; rice and all kinds of goodies in one pot.
My mom makes really good fried rice with Chinese sausages, carrots, onions, peas and (dried) shrimp. I only make fried rice when I have enough yesterday’s rice and leftovers left.
Yesterday we ate rice with stir fried green beans, roast pork and ruoc. We manage to finish all the beans but there was still some roast pork and rice left.So on the menu tonight: leftover fried rice.
I started with stir frying one chopped onion and 3 finely chopped garlic gloves. I just LOVE the smell of this combo together. Especially after I added some fresh ground pepper…mmmhhh sooo good!
Then I added the meat (roughly chopped) and one cubed tomato just to give it a bit of juice.
After inspecting my fridge I noticed that this red bell pepper wasn’t as firm as it used to be so I chopped that and threw it in as well.After stirring it for a bit I added the “old” rice. I never make fried rice with “fresh” cooked rice, just because fresh rice is sooo good with everything that I don’t want to waste it.
I love eggs either in my rice or on top. My hubby is a huge fan of fried egg on top of pretty much everything, but I didn’t want to use another pan so I cracked 2 eggs right on top of the rice.
I broke the eggs up and made sure they were evenly divided. Then I seasoned it with some salt and some more pepper and I even added a dash of Maggi sauce. I didn’t had any spring onions, but I did found some cilantro that needed to be eaten so I sprinkled some on top.
I know it sounds weird but I always eat my fried rice with a pickle. That crunchy sweet/sourness goes so well with the fried rice; in fact it goes with any fried rice.
And because it’s Friday I made some bread with herb butter. I normally don’t eat butter, but I couldn’t resist these golden brown goodies.
What are your plans for this weekend? I’m having dinner with a good friend of mine tomorrow. Already thinking about what to bring over…probably something chocolaty =)
